I
have been in a baking mood lately. Cookies, sauces, marinades… they have all
been whipped up from scratch in my kitchen with love and a little help from my
boys {I think they only help because I let them lick the pot when we are done}.
This week I raided my pantry and threw a whole heap of ingredients together to
create some chewy chocolate pecan oatmeal cookies. I call them chocolate chunk
oatmeal cookies because the pecans I used were pecan halves that I chopped up
into chunks. So when you bite into these cookies you get the chewy oatmeal
mixed with chunks of pecans and chocolate… delicious.
What you need:
1 stick of butter, softened
½ cup brown sugar
¼ cup white
granulated sugar
1 egg
1 teaspoon vanilla extract
¼ teaspoon baking soda
½ teaspoon salt
1 ½ cups quick-cooking oats
¾ cup all-purpose flour
1 cup semi sweet chocolate chips
½ cup chopped pecans
How to make it:
Preheat oven to 325º
In a bowl combine the butter, brown sugar,
and white sugar. Mix thoroughly until smooth.
Beat in the egg.
Stir in the vanilla extract.
Slowly stir in the flour, baking soda, and
salt. Blend well.
Add the oats, pecans, and chocolate chips.
Scoop spoonfuls of cookie dough onto and
ungreased baking sheet and bake for 12 minutes at 325º.
Take out and let cool before eating {or
transferring}.
These
were really quick and easy to whip up. They are chewy, but be careful not to
overcook them {as they don’t really turn a golden brown when done, I have found
with my oven that 12 minutes is the magic number}. I ate two of them after they
cooled a bit and then I put them out of my eye sight in the hopes that the
temptation wouldn’t be quite so strong…. There are no more cookies left. But to
be fair I have been letting the kids eat a cookie after meals and I did have
house guests who devoured these as well.
I
love oatmeal cookies. They might be my favorite. But I am a little picky about
my oatmeal cookies and don’t really like raisins in them. Instead I feel like
chocolate is the perfect complement to oatmeal. But then again, when is
chocolate not the answer?
