Once again I am back on a vegetable kick and
am looking for new ways to bring these healthy sides into my home and onto my
table. This dish in particular has been very perplexing for me and has taken
quite a few rewrites and alterations to bring it up to snuff. Thanks to many
tweaks and substitutions I have come up with a cheesy mashed cauliflower recipe
that is simply scrumptious.
I don’t think that I have mentioned before that I do not eat mashed potatoes. I never have. My mother informs me that even as a baby I refused to eat mashed potatoes. As a result of my inability to eat mashed potatoes, I do not make them. I know, I know – my poor husband and children never get to eat mashed potatoes {bad mommy}.
1 small head of cauliflower {chopped up into
small pieces}.
4 tbsp cream cheese
1/4 cup milk {I use 2%)
1/4 tsp Salt
1/4 tsp Pepper
4 tbsp cream cheese

1/2 cup shredded cheddar cheese
2 tbsp Parmesan Cheese
1 tsp paprika
1 tsp minced garlic
2 tbsp Parmesan Cheese

How to make it:
Take the chopped up cauliflower and boil it
until tender. I usually boil it for 8-10 minutes.
In a mixer combine cream cheese, milk, salt,
pepper, garlic and parmesan cheese.
Add in Cauliflower and blend until smooth, it
does not have to be perfectly smooth {in fact we prefer it a little lumpy}.
In a small greased pan pour in cauliflower mixture {I use a 9x9 glass baking dish} Sprinkle Paprika and shredded cheddar on top.

Bake at 350 for 20 minutes.

This cheesy mashed cauliflower recipe is a
nice alternative to mashed potatoes and is a great way to bring a vegetable to
the table. I am always looking for ways to tweak old recipes and bring more veggies
to the table. I find this becomes more and more of a challenge with my
children, who can get a bit picky. The cheesy creaminess of this dish really
made it outstanding and worth making again. I hope you enjoy it as much as I
do.
