I am all about a good dip. A really tasty dip is great as an appetizer for get-togethers with family and
friends or as a snack for football games. The easier the dip is to make the more I like it. Recently a friend of mine passed along this tasty Cheesy Pesto Dip that is too good not to share. This is a super quick and easy appetizer to whip up and it is really really yummy. So
I hope you give it a try and enjoy it just as much as I did!
What you need:
1 package of cream cheese
1 small container of pesto
2 Roma tomatoes {diced}
1 cup shredded mozzarella cheese
How to make it:
Take an oven safe backing dish and spray it with
nonstick spray. Then place the cream cheese in the center of the baking dish.
Pour the entire container of Pesto over the cream
cheese.
Take the diced tomatoes and place them over the cream cheese and Pesto.
Add the shredded mozzarella cheese over the top
and place in the oven and cook for 25 minutes at 375°.
Making this dip doesn’t
leave my kitchen looking like a circus has taken up residence. I use one dish
to bake it and one cutting board to dice up the tomatoes. It is a super simple
recipe with very little clean up. So it has that going for it.
I like to eat this dip with
Wheat Thins- because… well… I love Wheat Thins. But it is also good with regular
crackers too. I have been known to multitask this dip as a topping for grilled
chicken breasts as well. So if you want to give this recipe a try and you have
some left over think about using it as a topping for chicken.
