Coconut Oil Oatmeal Chocolate Chip Cookies #Recipe


I love cookies.  My kids love cookies… Everyone loves cookies. It is pretty safe to say that cookies are something that everyone would like to have more of in my house. While I do enjoy the occasional cookie, my thighs and hips let me know exactly just how much eating cookies is costing me. So I have been experimenting once again in the kitchen; this time with cookie recipes. I have been looking for ways of making a healthier – yet still delicious sweet treat. I have gotten rid of butter and instead changed things up by using coconut oil in my oatmeal chocolate chip cookie recipe.

What You Need:
1 1/4 cup old fashioned rolled oats {I use Bob’s Red Mill}
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup melted coconut oil
3/4 cup brown sugar
1 large egg
2 teaspoons vanilla extract
1/2 cup milk chocolate chips {dark chocolate is good as well}
2 teaspoons milk


How to Make It:
Preheat oven to 400°
In a bowl whisk together flour, oats, baking soda, and salt. Set aside for later.
In a bowl combine the melted coconut oil and brown sugar until smooth.
Add the egg, milk and vanilla to the coconut oil mixture and whisk for an additional 2 minutes or until smooth.
Add in flour mixture to the wet ingredients. Mix thoroughly.
Add the chocolate chips to the mixture.
Use a medium size cookie scoop and plop the dough onto an ungreased cookie sheet.
Bake 11 minutes or until edges just being to turn a golden brown.
Remove from oven and let cool a few minutes on baking sheet.

I have been making an effort to make healthier choices. This means that I am exercising more and eating healthier foods. But I still crave a sweet treat every now and again. This is my answer to having sweet treats in the house while still trying to be healthy. I am not a huge fan of coconut; in fact I enjoy the flavor but not the texture of coconut. The coconut oil is perfect because I get a hint of the flavor and avoid the texture of the coconut all together.

This cookie is a soft and chewy cookie that is highly addictive. Since chocolate chip oatmeal cookies are my favorite I find it hard to eat just one of these.  What is your favorite type of cookie?
