I opened the front door this morning and there was a bite in the air, it was cold. The kids and I quickly gave hubby a kiss goodbye and sent him on his way and we hustled back inside for some nice warm indoor morning activities. The cold weather got me thinking about some of my favorite fall dinner dishes. One of my personal favorites is my husband’s Pulled Pork Sandwiches.

These pulled pork sandwiches are made in the Crockpot and they are delicious! They smell great and taste even better. They have a nice kick to them without going overboard in the spice department. I love them for a fall/winter meal and since it is a crock pot dish it is really simple to toss in and go about our day.
What You Need for the Pulled Pork:
2 lb pork
boneless shoulder
1 onion
{sliced}
1 ½ cup
barbeque sauce
½ cup
water
2 tablespoons
minced onion {dry – spice}
1 teaspoon
allspice
1
teaspoon ground mustard
1
teaspoon crushed red pepper flakes
½ teaspoon
garlic powder
½ teaspoon
ground cinnamon
How to Make the Pulled Pork:
In a
bowl mix the dry minced onions, allspice, ground mustard, red pepper flakes,
garlic powder and cinnamon.
Rub
this mixture into the pork boneless shoulder.
Place the
pork boneless shoulder in the Crockpot and layer the sliced onion over the
pork.
Pour
the ½ cup of water over the pork.
Cover
and cook on LOW for 8-10 hours.
Remove
pork from Crockpot and place on cutting board
Remove
juices from the Crockpot and set aside.
Using 2
forks pull apart the pork.
Return
pork to Crockpot and stir in the barbeque sauce as well as ½ cup of the pork
juice you set aside previously.
Cover
and let cook for another 30 minutes or until heated through.
It is
really easy to make this dish. It is also super tasty. But we are not done
because we still have to throw together the broccoli slaw. I know this may not
sound good, but I actually prefer broccoli slaw over regular coleslaw. An added
bonus is the fact that it is ridiculously easy to throw together!
What you need for the Broccoli Slaw:
1 bag broccoli coleslaw (in the bagged salad
section of the grocery store)
¼ cup Marzetti slaw dressing
¼ cup Marzetti slaw dressing
¼ cup
sunflower seeds
How to make the Broccoli Slaw:
Toss
all ingredients in a Ziploc bag and mix it up until combined.
Refrigerate
for at least 30 minutes.
When we
eat this for a meal we use whole wheat buns and we toast them. We then take a
big spoonful of the pulled pork and top it with a spoonful of the broccoli
coleslaw. And then we devour it! This is a great cold weather meal and it is
really easy to make. My husband makes this meal on the weekends when we know we
are going to be super busy. I love it and I hope you do too!
