Piglet Pinwheels: An easy and HEALTHY appetizer!

A friend of mine gave me this recipe. I like to prepare it as an appetizer or as a sandwich alternative for the kids. It is really easy to make and very tasty to eat. The best part is that it can be as healthy as you want it to be. I have tried this with several different variations and this is my favorite.


Piglet Pinwheels

Preperation Time: 30 minutes
Servings: 8 wraps


What you need:
·         8 Large flour tortillas
·         Cream Cheese (8 oz) softened
·         Mayo (1 cup)
·         Hidden Valley Ranch dry packet ( 1 packet)
·         Carrots
·         Cucumber
·         Green pepper
·         Broccoli
·         Shredded Mexican Cheese (¼ cup)

How to make it:
1.      In a mixing bowl, blend the mayo, cream cheese, and Hidden Valley Ranch packet together until creamy.


2.      Chop all of the vegetables (I remove the seeds from the cucumber).


3.      Mix the veggies with the creamy mixture.


4.      Add the shredded cheese, mix until incorporated.


5.      Pile the mixture onto the tortilla and roll tightly. Hold together with saran wrap.


6.      Let the filled tortillas sit in fridge for 2 hours before slicing.


7.      Slice with seam down.


8.      EAT!


I have used this recipe for parties and for snacks and meals for the kids. It is really easy to prepare and it tastes delicious. The recipe is great for tweaking. Choose your favorite veggies and mix and match until you find what is right for you. I like this version because there is a little crunch and the flavors of veggies mixes well together. This is a great way to be sneaky and get the kids to eat their vegetables!
